A yummy dish I make far too rarely is banana pancakes. I alter the recipe every now and then, and this time I managed to get pancakes that are easy to fry.
Serve the pancakes with berries and quark or yogurt (high in protein, low in sugar). Or why not top your pancakes with some seeds, natural nuts, unsweetened nut butter, chopped fruit, unsweetened jam/apple sauce, homemade granola, protein powder or cacao powder (raw – without added sugar)?

- 1/2 banana
- 1 egg + 2 whites
- 2 tbsp oatmeal flour
- pinch of cinnamon
- coconut oil (to fry in)
- Mash the banana with a fork or hand mixer.
- Add egg, egg whites, flour and cinnamon. Mix/whisk together.
- The pancakes becomes easier to flip if you keep them small, I measure 1/2 dl for each pancake.
- Fry in coconut oil.
