Quinoa bowl

Difficult to come up with healthy alternatives for lunch? Why not make your own quinoa bowl? Use boiled quinoa as a base and add your favourite veggies. I chose grated carrots, beetroot, romanesco, bell pepper, sauerkraut, red cabbage and onion fried in coconut oil. I added a dressing made of olive oil, crushed garlic, lemon juice, pinch of salt and black pepper.
